It comes from the durum wheat that we cultivate with pride and passion, following the principles of Voluntary Integrated Agriculture, a method that respects the environment by combining organic and conventional practices. The result is protein-rich wheat (>14%), free from Pesticides, Glyphosate, and Mycotoxins.



Beyond Cultivation: A Care That Goes Further



We do not just grow the wheat, we care for it like a child. We collaborate with seed companies to select the best varieties to plant, always taking into account the peculiarities of our soil and climate. We enrich the fertility of the soil through biennial rotation with legumes and we store our wheat only when it reaches the perfect humidity for conservation, in Big Bag according to biological criteria.



The Transformation: The Magic of Creating Quality Pasta



The real magic happens during the transformation of our wheat into re-milled Whole Body Durum Wheat Semolina, rich in precious Wheat Germ and fibers. This high-protein flour improves the texture of the pasta and reduces the starch leakage during cooking, creating elastic, consistent, and non-sticky pasta.



The Extrusion and Drawing Process



To honor the quality of our wheat, we extrude the pasta at low pressure and draw it in bronze. This process maximally preserves its organoleptic characteristics and gives the pasta a rough surface, perfect for welcoming any type of sauce. The drying occurs at very low temperatures (36°/44°), to keep all the nutrients of the wheat intact.
