This type of polenta, a result of our Polenta Recipe, is perfect to be paired with rich ingredients such as cheese, butter, red or white meats, and even fish, especially freshwater fish like pike. Ingredients for the Classic Polenta Recipe (serves 4)

Polenta Recipe Procedure

  1. Initial Preparation: In a copper pot, bring the water to a boil with a pinch of salt and a generous spoonful of Organic Extra Virgin Olive Oil from the Peranzana mono-varietal (OLIO PIANO).
  2. Adding the Flour: As soon as the water begins to boil, add the corn flour gradually, stirring vigorously with a whisk during the first minutes of cooking.
  3. Cooking: Reduce the flame and continue cooking, stirring constantly and always in the same direction, with the appropriate juniper or hazel wood stick. If you don't have these tools, a long-handled wooden spoon will do.
  4. Cooking Time: The polenta takes about 25-30 minutes with èViva Corn Flour with corn germ. Once ready, serve it with sausage, pork ribs, beef stew, or with Mottera blue beans.

Polenta Concia: A Rich Variant of Our Polenta Recipe

For an even tastier polenta, follow our Polenta Concia variant. About 7/8 minutes before the end of cooking, add 250g of butter and 750g of toma cheese from the Lanzo Valleys. Continue cooking until the butter and cheese are completely melted. Finish with a sprinkle of Grana Padano cheese and pepper to taste.
