èViva Corn Flour with corn germ stands out for its fine grain, similar to "fioretto". This makes it ideal for obtaining a soft-looking polenta, the famous "POLENTA ALL’ONDA". This type of polenta, a result of our Polenta Recipe, is perfect to be paired with rich ingredients such as cheese, butter, red or white meats, and even fish, especially freshwater fish like pike. For an even tastier polenta, follow our Polenta Concia variant. About 7/8 minutes before the end of cooking, add 250g of butter and 750g of toma cheese from the Lanzo Valleys. Continue cooking until the butter and cheese are completely melted. Finish with a sprinkle of Grana Padano cheese and pepper to taste.
