When to choose the pitted ones?

Are they made with caustic soda?
No, never. They are debittered naturally in sea water purified through mechanical and ionic filters over 12–18 months. Industrial methods (Sevillian/Californian) use caustic soda in just a few hours: efficient, but they alter texture and aromatic profile.
In which formats are they available?
