The Pitted Olives in Brine are table olives of the native Peranzana cultivar, grown and hand-picked in our olive groves in Apricena (FG), in Puglia, and stripped of the stone to be ready to use in the kitchen.
They are naturally debittered in purified seawater with mechanical and ionic filters for 12–18 months: unlike the industrial Sevillian and Californian methods, which use caustic soda in a few hours, the Agricola Piano method is slower but preserves textur
