We decided to produce them according to one of these ancient recipes: our Peranzana olives, after ripening in brine, are bathed in our Peranzana EVO oil and flavoured with salt, garlic, parsley and chilli. The result is fragrant, crunchy and slightly spic

èViva Peranzana olives are born in our olive groves in Apricena (FG), in Puglia at about 100 m a.s.l., hand-picked at the end of November in their integrity, from our native Peranzana cultivar 100%.

What is Olive Denocciolate Condite
The Pitted Seasoned Olives are Peranzana 100% table olives, pitted and seasoned according to an ancient recipe of Roman origin: in the Roman Empire olives ripened in brine were drained and seasoned with oil and aromas before serving.
After ripening in brine, the olives are bathed in our Peranzana EVO oil and flavoured with salt, garlic, parsley and chilli. The result is fragrant, crunchy and slightly spicy olives, with a clear herbaceous note and fresh olive scent.
