The Pitted Seasoned Olives are Peranzana 100% table olives, pitted and seasoned according to an ancient recipe of Roman origin: in the Roman Empire olives ripened in brine were drained and seasoned with oil and aromas before serving.

After ripening in brine, the olives are bathed in our Peranzana EVO oil and flavoured with salt, garlic, parsley and chilli. The result is fragrant, crunchy and slightly spicy olives, with a clear herbaceous note and fresh olive scent.

From an ancient Roman recipe: in the Roman Empire, as Martial himself records, brine-cured olives were drained and dressed with oil and aromatics before serving.
What is the difference with olives in brine?
Olives in brine (sea water) are the raw material: fragrant, crisp, naturally savoury.
Why are they calorific (420 kcal/100 g)?
Because the dressing contains Peranzana extra virgin olive oil — the same award-winning oil from Agricola Piano — as the main ingredient after the olives. The calories come from the oil, not from sugars or additives (sugars 0 g per 100 g).
In which formats are they available?
