Vegetables in extra virgin olive oil

Salicornia Sott'Olio

Wild salicornia harvested from Lake Lesina (FG), stripped of its core by hand, in Peranzana extra virgin olive oil. Crisp, savory, with a taste of the sea.

Chosen by professionals

Wild salicornia gathered in July from the shores of Lake Lesina (FG), a brackish wetland of the Gargano: a halophyte plant that naturally stores mineral salts in its tissues — the savoriness isn't added, it's intrinsic.

The difference

Why choose Salicornia Sott'Olio

The fresh salicornia is sorted and blanched in water and vinegar to preserve its color and crunch. After cooking, the tougher inner core is removed by hand, keeping only the most tender, flavorful part.

It is then jarred with aromatic herbs and covered with 100% Italian extra virgin olive oil, with no additives or preservatives.

How to use it

Practical tips

Unopened: keeps for 36 months in a cool place. Once the jar is opened, refrigerate and use within 7 days, making sure the product always stays covered in oil.

In the fridge the oil may turn cloudy: this is normal — just bring the jar back to room temperature to restore its clarity.

FAQ

Frequently asked questions

Cos'è la salicornia?
A wild halophyte plant (Salicornia europaea) that grows along the brackish shores of the Gargano. Also known as sea asparagus, it has a crisp texture and a naturally savory, iodine-tinged taste.
Da dove viene questa salicornia?
From the shores of Lake Lesina (FG), in the Gargano: a brackish coastal lake separated from the Adriatic by a thin strip of land — an ideal habitat for wild salicornia. Foraged in July.
Perché va separata dall'anima a mano?
Salicornia has a double layer: a succulent, tender outer part (the part worth preserving) and a woody, fibrous inner filament. Separating them by hand is the only way to remove the tough core without damaging the outer segments.
Come si usa in cucina?
A light, flavorful antipasto or side dish, perfect with fish: tuna or salmon tartare, carpaccio, pasta with shrimp, risotto, crostini with burrata, summer salads, frittatas, or as a topping for white pizza and focaccia.
